The new weekly series AUTENTICO aims to showcase classic Italian cuisine from native Italians who live in St Louis. Authentic Italian food is simple, healthy, seasonal, and where luxury ingredients are used in moderation. Italian food is hyper-diverse within each region and the series' goal is to highlight each region's unique flavor and tastes. Each week a new episode is published on the YouTube Channel of the St Louis Italian Community. 

Today, over 1,500 Italians live in the St Louis metropolitan area with the bulk of new arrivals being young professionals, doctors, researchers, and students. Realizing that every region of Italy is represented in St Louis gave inspiration to the city's Italians to illustrate the diversity of Italy's cuisine. 

Below are the links to each of the four episodes which have been filmed thus far. 

Episode 1: Maria Piarulli, a native of Puglia, prepares the classic Italian dish Risotto with Leeks and Gorgonzola. Not only is Maria a fabulous cook, she is also a professor at Washington University in St Louis. 

Episode 2: Luciano Racca prepares the antipasto di sedano, noci e formaggio and pairs it with  Luciano is a native of Piemonte and is a wine maker with Raineri Gianmatteo.

Episode 3: Giovanna Capaldo prepares the classic dish: Gnocchi alla sorrentina. Giovanna is a native of Napoli (Naples, Italy) and lives in St Louis with her husband.

Episode 4: Back by popular demand, Luciano Racca prepares the classic dessert of his native Piemonte, pesche ripiene al forno. Luciano uses both Italian and English in this episode.
